The other day my Mom brought over a jar of dairy-free, egg free cookies with rosemary and pine nuts for us to try. I was intrigued and perplexed at the same time.

I’ve never come across such a combination before. (By the way, they tasted amazing!) I looked at the back of the cookie jar to try and figure out what the cookies were made of.

Flour, sugar, oil, pine nuts, rosemary.

I googled “Cookies with pine nuts and/or rosemary”. All the recipes I came across either had one or the other but never both. And they were all savoury. The ones that I had tried were sweet!

I felt compelled to tinker around in my kitchen until I could somehow come up with this lovely crispy, flavorful cookie on my own terms. And the result was exactly what I had hoped for! (Need I say that it took a total of 5 minutes to make the dough from start to finish?)

So here’s how it all went down!

The recipe calls for basic ingredients- all purpose flour, olive oil, fresh orange juice, honey, pine nuts and a sprig of fresh rosemary.

In a small bowl, whisk all the liquids together until you get an even mixture. In a large bowl combine the flour, baking soda, baking powder and salt.

Add the liquid ingredients to the dry ingredients and mix with a wooden spoon. You may need to mix by hand in the end just to make sure all the flour is evenly incorporated. Your dough shouldn’t be runny or flaky.

Add the pine nuts and rosemary to the dough and mix by hand to combine everything.

Form the dough into small round cookies, mine were about 5cmx5cm (2”x2”), or you can roll them into any shape you like! This dough is super easy to work with.

Stick them in the oven for 20-25 minutes, let them cool completely on a wire rack, and enjoy!

Lenten Cookies with Pine Nuts and Rosemary Recipe

Yield: 10-12 cookies

Ingredients

100gr olive oil (or vegetable oil)
60gr freshly squeezed orange juice (about 1 medium sized orange)
50gr honey
½ tsp baking powder
¼ tsp baking soda
Pinch of salt
2 tbs pine nuts (or to taste)
1 sprig fresh rosemary

Instructions

Preheat oven to 180 degrees.

In a small bowl combine 60gr orange juice, 100gr olive oil and 50gr honey. Whisk together until evenly combined.Combine all dry ingredients in a bigger bowl.

Add the liquid ingredients to the dry ingredients mixing with a wooden spoon and then by hand until fully combined.

Add pine nuts and rosemary and mix by hand until incorporated evenly into the dough.

Form dough into round cookies or bagel shaped cookies. Bake for 20-25 minutes or until the cookies have a golden brown crust.
