Soy Honey Baked Chicken Thighs

I probably start most of my recipe posts the same way, or at least that’s the message that’s conveyed in every single one of my posts. I’m a mom of three. I need fast, easy, healthy, nutritious and crowd-pleasing meals that will make the majority of the inhabitants in my house happy.

I can’t do complicated. Or time consuming. But I can’t compromise on taste and quality either. I think my motto should be “Fast, Easy, Tasty”. Anyway, I digress. Sort of.

Good, simple marinades are definitely my go-to when it comes to cooking chicken. It can be marinated in advance, left in the fridge, and cooked right when you need it. Throw in a side dish of something (wild rice works great for this particular recipe!) and you’ve got yourself a delicious dinner served in under 40 minutes!

One of our favorites is honey soy sauce marinade. It’s sweet yet salty, and creates the most amazing golden brown crust on the chicken thighs. I like to use low sodium soy sauce for the marinade, and always add some garlic, olive oil, and a pinch of salt to add extra flavor.

The great thing about this marinade is that you can make it last minute and marinade the chicken for 30 minutes or less (if it’s a last minute attempt to make dinner), or leave it in the ziplock bag for up to 4 hours. The results are equally good!

Preheat the oven to 190C/375F on the convection setting, place the chicken thighs in a baking dish and bake for 15 minutes, or until chicken forms a golden crust on the surface. Turn the chicken over and bake for 15 more minutes. Flip it once more and bake for 5-10 more minutes.

I like to serve it on wild rice or with noodles. It also tastes great topped with green onion.

Soy Honey Baked Chicken Thighs Recipe

Ingredients

1kg/2lbs skinless, boneless chicken thighs
3tbs low sodium soy sauce
6tbs honey
3tbs olive oil
4 garlic cloves, crushed
Pinch of salt

Instructions

Combine soy sauce, honey, olive oil, crushed garlic and salt in a ziplock bag. Add chicken thighs and marinate for 30 minutes-4 hours in the fridge.

Preheat oven to 190C/375F on the convection setting.

Place marinated chicken in a baking dish and bake for 15 minutes. Remove dish from the oven, turn the chicken over and bake for 15 more minutes. Remove the dish once again and turn the chicken back to its original side baking 5-10 more minutes until you see a golden brown crust.
